Dédé Wilson
Hi there! I am a happy, healthy, pain-free, symptom-free FODMAPer, but it was not always that way.
I’ve been in the food industry for over 30 years, first working in restaurants, the catering industry and owning my own bakery (with Robin) then onto newspaper writing (food focused), writing cookbooks and working as a Contributing Editor for Bon Appetit magazine for over a decade.
During that time I also hosted three of my own public television series, sponsored by KitchenAid, had a monthly segment on CBS The Early Show as well as the syndicated Emmy-winning The Better Show, did tons of national television food segments on shows such as the TODAY Show, Dr. Oz, The View, QVC, HSN and others.
In my free time (yes, that’s a joke) I did recipe development for corporate clients such as Williams-Sonoma, Driscoll’s and others and taught classes at colleges and privately. And for the majority of this time I was fighting a digestive issue that no one except close family knew about.

I have co-founded FODMAP Everyday with my life-long friend, fellow foodie and erstwhile business partner Dédé– to help manifest a relationship between food and love for those who may not have had such a positive experience in the past.
I Hold a Two-Fold Perspective:
First, love of self, where we must give our bodies what they need most–which means learning about your body and finding the purest, most healthy ingredients you can find and afford and learning to combine them so that they please your senses and palate and fulfill your physical needs in a way that respects your unique body.
Second, love of others. Nothing binds us more deeply than sharing a meal with others. And when we create meals of delectable substance, respect for the ingredients and the source of the food and offer them to our family and to our friends- we are saying “I love you.”

Erica Ilton, RDN, CDN
Erica Ilton is a Registered Dietitian Nutritionist and Licensed Dietitian Nutritionist with a private practice in New York City. She received a B.A. from Brown University and studied nutrition at Teacher’s College, Columbia University and Hunter College.
My first job as a nutritionist was doing research for a holistically oriented primary care physician. That was quickly followed by working one-on-one with patients at a busy complementary medicine practice − a job that reinforced my desire to provide personalized care to individuals struggling with a variety of health conditions. Other counseling positions (as well as writing and lecturing) followed, and after many years of working for some wonderful people and institutions, I opened my own practice in 2011.
At around the same time, my professional focus shifted to gastrointestinal health and disease, and I was lucky enough to be able to also hone my gastro skills as a Clinical Nutrition Coordinator in the Department of Gastroenterology at Mount Sinai Hospital. Now I’m ready to join the FODMAP Everyday team so I can help even more people find relief and (re)learn how to love food once again.

Back in my 20’s, I used to think Mountain Dew and Pop-Tarts were considered breakfast and the extreme stress I faced everyday as an analyst meant I was successful. I started to reconsider those beliefs once I was living with IBS. In looking for ways to overcome this condition, I started to learn more about nutrition and stress management. As I made small changes, I started to feel better.
The connection I found between food, lifestyle, and health was amazing! After my IBS improved, I decided to go back to school to study nutrition and become a registered dietitian. I knew I had finally found my passion.
After working in many areas of nutrition, I decided to start a private practice so I could adopt an integrative and functional approach to healing digestive disorders.
The low FODMAP diet is one of my favorite tools to teach clients, because it can provide amazing digestive symptom relief.

As a Registered Dietitian with a Master’s in Food Studies, I am a globally-experienced, food-first dietitian who is passionate about delicious, nutritious food for better health.

I love experimenting in the kitchen with different flavors and cuisines, and adapting recipes for various health needs. I teach cooking classes to share these skills with individuals and small groups.
My primary nutrition focus is on women’s health, especially for preconception, fertility, pre- and postnatal wellness.

Rachel Meltzer Warren MS, RDN
Going vegetarian at age 12 sparked a lifelong love of nutrition for me. At that time, however, I thought that being healthy was all about what you took out of your diet—and I assumed that not eating meat, but relying on pasta, French fries, and the occasional colorful veggie was OK. When I went to college to study journalism, I signed up for a nutrition course to fulfill my basic science requirement.
I learned so much about my own wellbeing in that class—and was so enamored by the content—that I signed up for another nutrition course…and another…I couldn’t get enough. Eventually I finished my journalism degree and headed back to school for a master’s in nutrition! I’ve spent every day since at the intersection of the worlds of food, health, and communication.
These days I spend most of my time writing about nutrition—for magazines, online, and books (I’ve now published two!). I also run a small private practice in Jersey City, New Jersey.
My main goals in my work with clients are to help empower young people to identify and love the food that loves them back, and to assist clients in turning times of transition (like adjusting to a restrictive diet, going to college, or becoming a mom) into launch pads for living nutritious, delicious lives.

I was introduced to yoga, and body movement in general, at a very young age – growing up in a family where yoga instruction was a daily practice and a profession and pre-dinner dancing around the house were integral to my daily life. Subtly, over time, I became aware of the profound impact this has had on my life choices and how I relates to my own body.
Current fitness culture often leads to injury, especially spinal and knee joint injury, and I enjoy focusing on these areas to increase spinal alignment and heighten subtle and innate awareness of the body throughout your day and during activity or exercise. My hope is to encourage you to listen in closely and explore a way to help yourself, keep your body safe, and expand your sense of awareness especially through asana and meditation, sound, and touch.

The low FODMAP diet has been life changing for me after nearly twenty years of battling with IBS. I have learned to thrive on an adapted low FODMAP diet. Teaching the low FODMAP diet and helping my clients feel better is one of the most rewarding aspects of my job. I have so much empathy for those suffering from IBS since I know how challenging it can be, you are not alone.
I love being a dietitian and helping others improve their food habits to feel better, improve IBS symptoms, achieve a healthy weight, and enjoy food without fear and guilt. My nutrition philosophy is to eat more plants. A diet rich in plant based fibers is an essential for growing a diverse and healthy gut garden, maintaining a healthy weight, and improve digestive health.
The more we learn about nutrition it keeps coming back to this basic concept. I am always pushing my clients to eat low FODMAP fruits, vegetables, beans, lentils, whole grains, nut, and seeds everyday.

Mollie Tunitsky
Chef, baker, and food blogger of Fit Fab FODMAP, Mollie Tunitsky, spent years trying to figure out why she was still having GI issues well into her twenties. After many appointments, Mollie finally landed on a doctor who listened. This doctor recommended that Molly try the Low FODMAP diet and actually took the time to walk her through the ins and outs of the diet.
Mollie realized that her story would resonate with many other low FODMAPers, and she knew that she had to share her experience. Together with her RDN, Gabriela Gardner, Mollie Tunisitsky wrote the book, The Low FODMAP Diet for Beginners where they share tips and tricks for people looking for a change. Having the dietitian that helped guide her through the Elimination and Challenge phases be her co-author brings this very personal story to life.
