Two-Ingredient Coconut Popsicles

Cantaloupe Lime Popsicles

Easy to make – as long as you have a Popsicle mold, which are easy to find in supermarkets, big-box stores, even dollar stores. Chocolate Covered Banana Popsicles

Kids and adults go crazy over these popsicles. You do need a popsicle mold, but the recipe is super simple. The liquid is canned coconut milk, to which you add very ripe mash banana. These are amazing, just like the Tres Leches Cake, although I thought to call these “Two Leches”, as they only contain two types of milk. I also did not use cake for two reasons, first because the cake got very mushy and unpalatable in my first tests. The second reason is that I figured, my readers would appreciate something simpler that they could make with the kids. I use ladyfingers and it worked fantastically.
